Instructions
 

  • Step 1: Preheat the oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, combine peanut butter, coconut oil, brown sugar, and granulated sugar. Blend until creamy. Add egg, vanilla extract, and vanilla bean paste, mixing until fully incorporated.
  • Step 3: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, stirring until combined.
  • Step 4: Gently fold in oats, baking chips, Rice Krispies, and Snickers bars until evenly distributed.
  • Step 5: Portion the dough onto a prepared baking sheet, leaving space between each cookie.
  • Step 6: Bake for 10-12 minutes or until edges are golden brown. Centers will look slightly underbaked.
  • Step 7: Cool on baking sheet for 5 minutes before transferring to a cooling rack.

Notes

  • For extra chewiness, chill the dough for 30 minutes before baking.
