For the Cinnamon Rolls:
- 1 3/4 cups self-rising flour
- 1 cup vanilla Greek yogurt (or coconut/soy yogurt)
- 2 tablespoons melted butter
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 2 ounces softened cream cheese
For the Frosting:
- 2 tablespoons softened butter
- 6 tablespoons confectioners' sugar
Instructions:
In a mixing bowl, combine the self-rising flour and Greek yogurt. Mix until a dough forms. If the dough is too sticky, add a little extra flour until it’s manageable.
On a lightly floured surface, roll the dough into a rectangle about 1/4 inch thick. Aim for an even thickness to ensure even cooking.
Melt 2 tablespoons of butter and brush it over the rolled-out dough. In a small bowl, mix together the brown sugar and cinnamon, then sprinkle it evenly over the buttered dough.
Starting from one edge, carefully roll the dough into a tight log. Use a sharp knife to cut the log into 1-inch thick slices.
Preheat your air fryer to 320°F (160°C). Place the cinnamon rolls in the air fryer basket, ensuring they have room to expand. Air fry for 10-12 minutes or until golden brown and cooked through.
While the cinnamon rolls are cooking, beat together the softened cream cheese, 2 tablespoons of softened butter, and confectioners' sugar in a bowl until smooth and creamy.
Once the rolls are out of the air fryer, let them cool for a few minutes. Generously spread the cream cheese frosting over the warm rolls. Serve immediately and enjoy!
- For a lighter version, use low-fat yogurt instead of regular yogurt.
