  • 1 jar dill pickle coins (16-ounce, drained)
  • 1 large egg
  • 1 cup panko breadcrumbs
  • extra-virgin olive oil (for drizzling)
  • remoulade sauce (for dipping)

  • Start by draining the pickle coins thoroughly to remove excess moisture.
  • In a mixing bowl, crack one egg and whisk it until it’s well beaten. On a separate plate, spread out the panko breadcrumbs.
  • Take a pickle coin and dip it into the beaten egg, then transfer it to the plate with panko breadcrumbs. Press gently on both sides to ensure even coating.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Arrange the breaded pickle coins in a single layer in the air fryer basket. Lightly drizzle olive oil over the pickles and air fry for 8-10 minutes, flipping halfway through.
  • Once cooked, carefully remove the fried pickles and serve immediately with remoulade sauce for dipping.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs.
  • Experiment with seasonings in the breadcrumbs for added flavor.
  • Store leftovers in an airtight container for up to 3 days.
