Ingredients
- 1 jar dill pickle coins (16-ounce, drained)
- 1 large egg
- 1 cup panko breadcrumbs
- extra-virgin olive oil (for drizzling)
- remoulade sauce (for dipping)
Instructions
Start by draining the pickle coins thoroughly to remove excess moisture.
In a mixing bowl, crack one egg and whisk it until it’s well beaten. On a separate plate, spread out the panko breadcrumbs.
Take a pickle coin and dip it into the beaten egg, then transfer it to the plate with panko breadcrumbs. Press gently on both sides to ensure even coating.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Arrange the breaded pickle coins in a single layer in the air fryer basket. Lightly drizzle olive oil over the pickles and air fry for 8-10 minutes, flipping halfway through.
Once cooked, carefully remove the fried pickles and serve immediately with remoulade sauce for dipping.
- For a gluten-free option, use gluten-free breadcrumbs.
- Experiment with seasonings in the breadcrumbs for added flavor.
- Store leftovers in an airtight container for up to 3 days.
