Ingredients
- 12 medium cremini or white mushrooms
- 4 ounces cream cheese softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Start by cleaning your mushrooms gently with a damp paper towel to remove any dirt. Carefully remove the stems from the mushrooms, creating a hollow space for the filling. Set the caps aside and finely chop the stems.
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped mushroom stems, breadcrumbs, chopped parsley, garlic powder, salt, and pepper. Mix everything until it's well combined and creamy.
Using a spoon or small scoop, fill each mushroom cap generously with the filling mixture. Don’t be shy; a heaping scoop makes for a delicious bite!
Preheat your air fryer to 350°F (175°C) for about 3-5 minutes. This ensures that the mushrooms start cooking immediately and helps achieve a crispy exterior.
Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the stuffed mushrooms in the basket in a single layer, making sure they aren’t overcrowded. Air fry for 10-12 minutes, or until the mushrooms are tender and the tops are golden brown.
Once cooked, carefully remove the mushrooms from the air fryer and let them cool for a few minutes. Garnish with extra parsley if desired, and serve warm.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- These mushrooms can be frozen uncooked; just add extra time when air frying.
- Feel free to substitute ingredients based on what you have on hand, like ricotta for cream cheese.
