Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1/2 cup flaked coconut
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons flaxseed meal
  • 1 tablespoon chia seeds
  • 1/4 teaspoon kosher salt
  • 1/2 cup creamy almond butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chopped almonds
  • 2 tablespoons chocolate chips

Instructions
 

  • Start by measuring out all your ingredients to ensure you won't miss anything.
  • In a large mixing bowl, add the old-fashioned rolled oats, flaked coconut, cocoa powder, flaxseed meal, chia seeds, and kosher salt. Mix until well combined.
  • Add the almond butter, honey, and vanilla extract to the bowl. Stir until you have a thick and sticky mixture.
  • Fold in the chopped almonds and chocolate chips for added crunch and flavor.
  • Scoop out small portions and roll them into balls about 1 inch in diameter, yielding around 12 to 15 energy balls.
  • Place the energy balls on a baking sheet and refrigerate for at least 30 minutes to set.

Notes

  • For a vegan option, substitute honey with maple syrup or agave nectar.
  • Store energy balls in an airtight container in the refrigerator for up to one week.
  • Freeze energy balls for up to three months in a freezer-safe bag.
