Ingredients
  

  • 1 cup unsweetened shredded coconut
  • 3/4 cup canned coconut milk chilled
  • 2 tablespoons maple syrup
  • 1/4 cup almonds
  • 1 1/4 cups chocolate chips (dark or milk)

Instructions
 

  • In a mixing bowl, combine the unsweetened shredded coconut, chilled coconut milk, and maple syrup. Mix until everything is well incorporated.
  • Line your 8x8 inch baking dish with parchment paper. Spread the coconut mixture evenly in the dish, pressing down firmly to create a compact layer.
  • Place the almonds on top of the coconut mixture, pressing them gently into the coconut layer.
  • Place the baking dish in the freezer for about 30 minutes, allowing the coconut mixture to firm up.
  • Melt the chocolate chips using a double boiler or in a microwave-safe bowl, heating in 30-second increments, stirring until smooth.
  • Once the coconut base is firm, remove it from the freezer. Pour the melted chocolate over the coconut and almond layer, spreading it evenly.
  • Return the dish to the freezer for another 30 minutes to set the chocolate.
  • Once set, lift the Almond Joy bars out of the dish using the parchment paper. Cut into squares or rectangles, and enjoy!

Notes

  • Chill the coconut milk overnight for the best texture.
  • Experiment with different nuts for variety.
  • Store in an airtight container in the fridge for up to a week.
