Almond Joy Recipe

- 1 cup unsweetened shredded coconut
- 3/4 cup canned coconut milk chilled
- 2 tablespoons maple syrup
- 1/4 cup almonds
- 1 1/4 cups chocolate chips (dark or milk)
In a mixing bowl, combine the unsweetened shredded coconut, chilled coconut milk, and maple syrup. Mix until everything is well incorporated.
Line your 8x8 inch baking dish with parchment paper. Spread the coconut mixture evenly in the dish, pressing down firmly to create a compact layer.
Place the almonds on top of the coconut mixture, pressing them gently into the coconut layer.
Place the baking dish in the freezer for about 30 minutes, allowing the coconut mixture to firm up.
Melt the chocolate chips using a double boiler or in a microwave-safe bowl, heating in 30-second increments, stirring until smooth.
Once the coconut base is firm, remove it from the freezer. Pour the melted chocolate over the coconut and almond layer, spreading it evenly.
Return the dish to the freezer for another 30 minutes to set the chocolate.
Once set, lift the Almond Joy bars out of the dish using the parchment paper. Cut into squares or rectangles, and enjoy!
