Ingredients
  

  • 4 cups riced cauliflower fresh or frozen
  • 1 large egg acts as a binder
  • ½ cup shredded cheddar cheese adds flavor
  • ½ cup shredded Parmesan cheese for extra depth of flavor
  • ½ cup all-purpose flour helps achieve texture
  • ½ grated onion provides moisture and sweetness
  • 1 clove garlic minced
  • 1 teaspoon salt essential for seasoning
  • ½ teaspoon ground pepper adds a gentle kick

Instructions
 

  • Begin by ricing your cauliflower. If using fresh, cut into florets and pulse in a food processor until rice-like. If frozen, thaw and drain excess moisture.
  • Place riced cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  • In a large mixing bowl, combine riced cauliflower, egg, cheddar cheese, Parmesan cheese, flour, grated onion, garlic, salt, and pepper. Mix until well incorporated.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Shape small portions of the mixture into tots and place on the baking sheet.
  • Bake for about 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • Remove from oven and let cool slightly before serving. Enjoy with your favorite dipping sauce!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze uncooked or cooked tots for up to 2 months.
  • Reheat frozen tots at 400°F (200°C) for 25-30 minutes until crispy.
