  • 0.25 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1.5 cups all-purpose flour
  • 1.75 teaspoons baking powder
  • 0.5 cup granulated sugar
  • 0.5 cup oil (sunflower or canola or corn oil)
  • 2 large eggs (at room temperature)
  • 0.5 cup yogurt (or sour cream)
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  • Step 2: Peel and dice the apples into small pieces. In a medium bowl, combine the diced apples with light brown sugar and ground cinnamon. Toss to coat the apples well and set aside.
  • Step 3: In a large mixing bowl, whisk together all-purpose flour, baking powder, and a pinch of salt.
  • Step 4: In another bowl, beat together granulated sugar and oil until well combined. Add eggs, yogurt, and vanilla extract. Mix until smooth.
  • Step 5: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently just until combined.
  • Step 6: Gently fold in the apple mixture, ensuring the apples are evenly distributed throughout the batter.
  • Step 7: Pour the batter into the prepared cake pan and smooth the top. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 8: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
