  • 4 whole-grain tortillas 6 inch
  • 2 avocados ripe, peeled, and seeds removed
  • 3 teaspoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar optional
  • Freshly squeezed lemon juice to taste
  • 4 free-range eggs
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper

  • Step 1: Prepare the Avocado Spread. In a mixing bowl, mash the peeled avocados with a fork. Add the extra virgin olive oil, balsamic vinegar (if using), and a squeeze of lemon juice. Mix until smooth, then season with salt and pepper to taste. Set aside.
  • Step 2: Cook the Eggs. Heat a non-stick skillet over medium heat. Crack the eggs into the skillet and season them with salt and pepper. Cook the eggs until the whites are set but the yolks are still runny, or to your desired doneness. This usually takes about 3-4 minutes for sunny-side-up eggs.
  • Step 3: Warm the Tortillas. While the eggs are cooking, warm the whole-grain tortillas in another skillet or microwave. This makes them more pliable and easier to wrap.
  • Step 4: Assemble the Wraps. Spread a generous layer of the avocado mixture on each tortilla. Place one cooked egg on top of the avocado spread.
  • Step 5: Roll It Up. Carefully roll the tortilla around the filling, tucking in the sides as you go to create a neat wrap. Repeat with the remaining tortillas and fillings.
  • Step 6: Serve and Enjoy. Slice the wraps in half, if desired, and serve immediately. These wraps are perfect for a quick meal on the go!
