Ingredients
  

  • 1 teaspoon ground cinnamon Adds a warm, aromatic flavor that complements the sweetness.

  • 1 cup unbleached all-purpose flour, whole wheat or gluten-free mix (5 ounces in weight) Provides the necessary structure for the bagels.
  • 2 teaspoons baking powder Make sure it’s fresh for the best rise.
  • 3/4 teaspoon kosher salt Balances the sweetness; use less if using table salt.
  • 1 cup non-fat Greek yogurt This is crucial for achieving the right texture; avoid regular yogurt as it may become too sticky.
  • 1 large egg white or whole egg beaten; adds richness and helps bind the dough.
  • 1 tablespoon mini semi-sweet chocolate chips Optional, but highly recommended for that wonderful chocolatey surprise.

Instructions
 

  • Preheat your oven to 375°F (190°C). This ensures that your bagels get a nice golden color and perfect texture.
  • In a mixing bowl, combine the unbleached all-purpose flour, ground cinnamon, granulated sugar, baking powder, and kosher salt. Whisk them together until well-blended.
  • Add the non-fat Greek yogurt to the dry ingredients. Using a spatula or wooden spoon, mix until a dough forms. The mixture will be slightly sticky but should hold together.
  • Lightly flour your work surface and transfer the dough. Knead it gently for about 1-2 minutes until it becomes smooth. Be careful not to over-knead, as this can lead to tough bagels.
  • Divide the dough into equal portions (about 4-6, depending on your desired size). Roll each piece into a rope and form it into a circle, pinching the ends together. Place them on a baking sheet lined with parchment paper.
  • Using a pastry brush, gently brush the tops of the bagels with the beaten egg white or whole egg. This will give them a beautiful, shiny finish.
  • Sprinkle the mini semi-sweet chocolate chips onto the tops of the bagels, pressing them in slightly to ensure they stick during baking.
  • Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the bagels are golden brown. Your kitchen will be filled with the irresistible aroma of cinnamon and chocolate!
  • Once baked, allow the bagels to cool on a wire rack for a few minutes. Serve warm or let them cool completely before storing.

Notes

  • Store leftover bagels in an airtight container at room temperature for up to 2 days.
  • For longer storage, wrap them tightly in plastic wrap and freeze for up to 2 months.
