- 1/2 cup shelled pistachios chopped
- 1/4 cup honey for drizzling
- 1/2 cup dried figs chopped
- 1 tablespoon olive oil for toasting pistachios and figs

Start by preheating your oven to 350°F (175°C). This temperature is perfect for melting the brie gently without overcooking it.
In a small bowl, combine the chopped pistachios and chopped dried figs. Drizzle the olive oil over the mixture and toss gently to coat. Sprinkle the fresh thyme leaves and a pinch of salt, mixing well.
Place the round of brie on your baking sheet or in an oven-safe dish. Evenly spread the pistachio and fig mixture over the top of the cheese.
Place the baking sheet in the oven and bake for about 10-15 minutes until the cheese is soft and melty but not completely liquefied.
Remove the baked brie from the oven and immediately drizzle the honey over the top. Serve warm with slices of fresh baguette or your favorite crackers.
