Equipment

  • Mixing Bowl
  • Sheet Pan
  • Measuring cups and spoons
  • Knife and cutting board
  • Oven

Ingredients

For the Chicken Bites:

  • 2 pounds boneless skinless chicken breast or thighs
  • 1 unit lemon juiced
  • ½ cup olive oil
  • 6 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 2 teaspoons paprika
  • ½ teaspoon turmeric
  • teaspoon ground cinnamon
  • teaspoon crushed red pepper
  • 2 tablespoons chopped fresh parsley

Instructions

Instructions:

  • In a mixing bowl, combine the lemon juice, olive oil, minced garlic, salt, black pepper, cumin, paprika, turmeric, cinnamon, and crushed red pepper. Whisk together until well combined.
  • Cut the boneless skinless chicken breast or thighs into bite-sized pieces. Add the chicken to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes—preferably up to 2 hours for maximum flavor.
  • Preheat your oven to 400°F (200°C). This ensures that your Baked Chicken Shawarma Bites will cook evenly and develop a nice golden color.
  • Line a sheet pan with parchment paper for easy cleanup. Spread the marinated chicken pieces on the sheet pan in a single layer. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Once baked, remove the chicken from the oven and sprinkle with fresh parsley for a burst of color and freshness. Serve your Baked Chicken Shawarma Bites hot, with your choice of dipping sauce or alongside pita bread and salad.

Notes

  • Leftover Baked Chicken Shawarma Bites can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
  • For a healthier option, use skinless chicken thighs for juiciness.
  • Serve with whole wheat pita or lettuce wraps for a lighter meal.
  • Include roasted vegetables for added nutrients.
