Ingredients
  

  • 4 fillets Fresh cod fish firm, white
  • 3 cloves Garlic sliced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper adjust to taste
  • 1 tablespoon Extra-virgin olive oil
  • 1 tablespoon Thyme leaves fresh
  • 1 cup Cherry tomatoes halved
  • 1 wedge Lemon for serving

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Drizzle a tablespoon of extra-virgin olive oil into the baking dish, spreading it around to coat the bottom.
  • Place the fresh cod fillets in the baking dish. Season generously with salt, black pepper, and cayenne pepper. Distribute the sliced garlic evenly over the fillets.
  • Scatter the cherry tomatoes around the cod. Sprinkle fresh thyme leaves over the entire dish.
  • Place the baking dish in the preheated oven and bake for about 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
  • Remove the dish from the oven. Serve the baked cod hot, garnished with a lemon wedge.

Notes

  • Ensure cod fillets are thawed completely for even cooking.
  • For a crispy top, place under the broiler for the last minute, watching closely.
  • Add other vegetables like zucchini for a one-pan meal.
