Ingredients
  

  • 1 cup milk any variety
  • 2 large eggs
  • 1 cup cottage cheese low-fat or full-fat
  • 2 medium ripe bananas the riper, the sweeter
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 cups rolled oats quick-cooking or old-fashioned

Instructions
 

  • Start by blending the rolled oats in a blender or food processor until they reach a fine flour consistency.
  • In a large mixing bowl, mash the ripe bananas. Add the eggs, cottage cheese, and milk, and mix until well combined.
  • Stir in the blended oat flour, baking powder, and ground cinnamon. Mix until just combined; a few lumps are fine.
  • Place a non-stick skillet over medium heat and warm it up. Lightly grease if desired.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 3-4 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  • Transfer pancakes to a plate and keep warm while repeating with remaining batter. Serve with favorite toppings.

Notes

  • For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
  • Use overly ripe bananas for the best sweetness.
  • If the batter is too thick, add more milk until desired consistency.
  • Top with sliced bananas or chopped nuts for added texture.
