Ingredients
  

  • 8 oz pasta (linguine or fettuccine)
  • 1 lb shrimp peeled and deveined
  • 2 cups broccoli florets
  • 3 tablespoons olive oil divided for roasting broccoli and sautéing shrimp
  • 1 tablespoon garlic minced
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon smoked paprika
  • salt and pepper to taste
  • 2 green onions chopped for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C). Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 15-20 minutes until tender and slightly caramelized.
  • While the broccoli roasts, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, minced garlic, smoked paprika, salt, and pepper. Adjust sriracha to your preferred spice level.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season shrimp with salt, pepper, and smoked paprika. Cook shrimp 2-3 minutes per side until pink and opaque. Remove from heat.
  • Add cooked pasta to the skillet with shrimp. Pour bang bang sauce over and toss gently to coat. Add reserved pasta water if sauce is too thick.
  • Fold in roasted broccoli carefully. Sprinkle chopped green onions on top and serve immediately.

Notes

  • Do not overcook the shrimp to avoid rubbery texture.
  • Substitute half the mayonnaise with Greek yogurt for a lighter sauce.
  • Roast broccoli at high temperature for perfect caramelization.
