- 1 lb shrimp peeled and deveined
- 2 cups broccoli florets
- 3 tablespoons olive oil divided for roasting broccoli and sautéing shrimp
- 1 tablespoon garlic minced
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha adjust to taste
- 1 teaspoon smoked paprika
- salt and pepper to taste
- 2 green onions chopped for garnish
Preheat your oven to 425°F (220°C). Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 15-20 minutes until tender and slightly caramelized.
While the broccoli roasts, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, minced garlic, smoked paprika, salt, and pepper. Adjust sriracha to your preferred spice level.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season shrimp with salt, pepper, and smoked paprika. Cook shrimp 2-3 minutes per side until pink and opaque. Remove from heat.
Add cooked pasta to the skillet with shrimp. Pour bang bang sauce over and toss gently to coat. Add reserved pasta water if sauce is too thick.
Fold in roasted broccoli carefully. Sprinkle chopped green onions on top and serve immediately.
