Ingredients
  

  • 1 cup cooked beets peeled and chopped
  • 1 can chickpeas drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • Water as needed for consistency
  • Fresh herbs for garnish (like parsley or dill)

Instructions
 

  • Start by cooking your beets until they are tender. You can either roast them in the oven or boil them on the stovetop. If you're short on time, pre-cooked beets from the store work perfectly too!
  • Once the beets are ready, gather all your ingredients together. This will make the process smoother and faster.
  • In your food processor, combine the cooked beets, chickpeas, tahini, olive oil, lemon juice, minced garlic, and ground cumin. Season with salt and pepper.
  • Blend the mixture until it reaches a smooth and creamy consistency. If the hummus is too thick, add water a tablespoon at a time until you achieve your desired texture.
  • Taste your beet hummus and adjust seasoning as needed. You may want to add more lemon juice for acidity or more salt for flavor.
  • Transfer the beet hummus to a serving bowl, drizzle with a bit of olive oil, and garnish with fresh herbs. Serve with your favorite dippers and enjoy!

Notes

  • For a smokier flavor, try roasting your garlic before adding it to the mixture.
  • Feel free to customize the spices! Add a pinch of cayenne for heat or smoked paprika for a deeper flavor.
  • If you love a hint of sweetness, consider adding a drizzle of honey or maple syrup.
