Ingredients
  

  • 3 pieces ripe yellow plantains Choose plantains that are yellow with some dark spots for the best sweetness.
  • 2 tablespoons vegetable oil For greasing your hands to prevent the mixture from sticking.
  • 1 cup hard mozzarella diced, a key ingredient for that gooey, cheesy center.
  • ½ cup ground Parmesan or Pecorino Adds a wonderful depth of flavor and enhances the cheese experience.
  • 2 tablespoons salted butter Used to grease the tray, giving a nice flavor to the bolitas as they bake.

Instructions
 

  • Begin by peeling the ripe plantains. Cut them into chunks and place them in a pot of boiling water. Boil for about 10-15 minutes, or until they are tender when pierced with a fork.
  • Once boiled, drain the plantains and transfer them to a mixing bowl. Using a fork or potato masher, mash them until smooth and free of lumps.
  • Add the diced mozzarella and ground Parmesan or Pecorino to the mashed plantains. Mix thoroughly until the cheese is evenly distributed throughout the plantain mixture.
  • Grease your hands with vegetable oil to prevent sticking. Take a small amount of the plantain mixture and form it into a ball, about the size of a golf ball. Repeat until all the mixture is used.
  • Preheat your oven to 400°F (200°C). Grease the baking tray with salted butter to ensure the bolitas do not stick while baking.
  • Place the formed bolitas onto the greased baking tray, making sure they are spaced out. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy on the outside.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place them on a baking sheet at 350°F (175°C) for about 10 minutes.
  • For a vegan option, substitute cheese with nutritional yeast or a plant-based cheese alternative.
