Ingredients
  

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup uncooked orzo pasta
  • 2.5 cups chicken or vegetable broth
  • 1 package (5.2 oz) Boursin cheese softened
  • 2 cups fresh baby spinach packed
  • 2 cups cooked chicken chopped or shredded
  • Salt and pepper to taste
  • Fresh chives chopped (optional, to taste)

Instructions
 

  • In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the uncooked orzo to the skillet and stir to coat the pasta with the onion and garlic mixture. Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce the heat and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  • Once the orzo is cooked, remove the skillet from the heat. Stir in the softened Boursin cheese, ensuring it melts into the pasta, creating a creamy sauce.
  • Fold in the fresh baby spinach and cooked chicken, stirring until the spinach wilts and everything is well combined. Season with salt and pepper to taste.
  • Serve warm, garnished with fresh chopped chives if desired.

Notes

  • For a vegetarian option, replace the chicken with chickpeas or tofu.
  • Use gluten-free orzo if you’re following a gluten-free diet.
  • Swap Boursin cheese with a dairy-free cream cheese for a vegan version.
