- 1 cup uncooked orzo pasta
- 2.5 cups chicken or vegetable broth
- 1 package (5.2 oz) Boursin cheese softened
- 2 cups fresh baby spinach packed
- 2 cups cooked chicken chopped or shredded
- Salt and pepper to taste
- Fresh chives chopped (optional, to taste)
In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Add the uncooked orzo to the skillet and stir to coat the pasta with the onion and garlic mixture. Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce the heat and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
Once the orzo is cooked, remove the skillet from the heat. Stir in the softened Boursin cheese, ensuring it melts into the pasta, creating a creamy sauce.
Fold in the fresh baby spinach and cooked chicken, stirring until the spinach wilts and everything is well combined. Season with salt and pepper to taste.
