Ingredients
  

  • 4 large eggs
  • 1 cup cooked sausage chicken or turkey
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • salsa for serving

Prepare Your Ingredients

  • Dice the bell peppers and onion into small, even pieces. Cook sausage thoroughly in a skillet over medium heat until browned and no longer pink, then set aside. Crack eggs into a bowl, add salt and pepper, and whisk until combined.

Sauté the Vegetables

  • Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers and sauté for 3-4 minutes until softened and slightly caramelized.

Cook the Eggs

  • Push sautéed vegetables to one side of the skillet. Pour whisked eggs into the empty side and let sit a few seconds before gently stirring. Cook eggs, stirring occasionally, until softly scrambled and just set.

Combine Sausage and Cheese

  • Add cooked sausage to the eggs and vegetables in the skillet. Stir to combine evenly. Sprinkle shredded cheddar cheese over the mixture and allow it to melt slightly from residual heat.

Warm the Tortillas

  • Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable and soft.

Assemble the Burritos

  • Divide the egg, sausage, and cheese mixture evenly among the four tortillas. Spoon filling into center of each tortilla, then fold in sides and roll tightly to form burrito.

Serve

  • Serve burritos immediately with salsa for dipping or topping.
