- 1 large egg
- 1/4 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- pinch salt
- 1 tablespoon oil
- 1/2 cup broccoli fresh, diced finely
- 1/4 cup water
- 4 taco size tortillas
- 3/4 cup cheddar cheese shredded
Start by dicing up the broccoli into small pieces. In a skillet, add the diced broccoli and 1/4 cup of water. Cover and steam for about 3-4 minutes until tender. Drain excess water.
In a mixing bowl, crack the egg and whisk it with garlic powder, oregano, paprika, cumin, and salt until combined.
In the same skillet, heat oil over medium heat. Add steamed broccoli and pour the egg mixture over it. Cook for about 2-3 minutes, stirring gently until the egg is cooked.
Take one tortilla and sprinkle cheese on one half. Spoon the broccoli and egg mixture over the cheese, then top with more cheese. Fold the tortilla in half.
Place the folded quesadilla in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.
Remove the quesadilla from the skillet, let it sit for a minute, then slice into wedges. Serve with salsa or avocado.
