Ingredients
  

Vegetables

  • 1 large Potato sliced into rounds
  • 1 medium Eggplant sliced into rounds
  • 1 medium Zucchini sliced into rounds
  • 1 medium Red Onion sliced into half-moons
  • 1 large Tomato sliced into rounds

Oil and Seasoning

  • ½ cup Extra Virgin Olive Oil (120 ml)
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper
  • 1 can Tomato Sauce (14.5 oz / 400 g) or passata
  • 3 sprigs Thyme for garnish

Instructions
 

  • Step 1: Prepare your ingredients by washing and slicing the vegetables into uniform ¼ inch thick rounds. Preheat your oven to 375°F (190°C).
  • Step 2: In a mixing bowl, combine the olive oil, minced garlic, dried oregano, salt, and black pepper to create a flavor base.
  • Step 3: In a large baking dish, layer the sliced vegetables starting with potatoes, followed by eggplant, zucchini, red onion, and tomato. Drizzle some of the olive oil mixture over each layer.
  • Step 4: Pour the tomato sauce or passata evenly over the layered vegetables.
  • Step 5: Scatter thyme sprigs on top, cover with aluminum foil, and bake for about 45 minutes. Remove the foil and bake for an additional 15-20 minutes until vegetables are tender and edges are crispy.

Notes

Let the briam rest for at least 10 minutes after baking for the flavors to meld. Serve with freshly chopped parsley or feta cheese if desired.
