Start by rinsing your small head of broccoli under cold water. Cut it into florets and place them in a food processor. Pulse until the broccoli is finely riced.
Once your broccoli is riced, steam it lightly to soften it in a microwave-safe bowl with a splash of water for about 2-3 minutes. Let it cool slightly.
In a mixing bowl, combine the riced broccoli, eggs, parmesan cheese, mozzarella cheese, salt, pepper, and Italian seasoning (if using). Stir until well combined.
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Transfer the broccoli mixture onto the parchment paper and press it into a circular crust shape, about 1/4 inch thick.
Bake the crust for about 15-20 minutes, or until it’s golden and crispy.
Once baked, spread the pizza sauce evenly over the top, sprinkle your choice of cheese and any additional toppings.
Return the topped pizza to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly.
Remove from the oven and let it cool for a couple of minutes. Slice and enjoy!
