Crust Ingredients

  • 1 small head broccoli (about 2-3 cups riced)
  • 2 large eggs
  • 1/4 cup parmesan cheese
  • 1/4 cup mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Italian seasoning (optional)

  • 1/4 cup pizza sauce
  • 1 cup cheese

Cooking Instructions

  • Start by rinsing your small head of broccoli under cold water. Cut it into florets and place them in a food processor. Pulse until the broccoli is finely riced.
  • Once your broccoli is riced, steam it lightly to soften it in a microwave-safe bowl with a splash of water for about 2-3 minutes. Let it cool slightly.
  • In a mixing bowl, combine the riced broccoli, eggs, parmesan cheese, mozzarella cheese, salt, pepper, and Italian seasoning (if using). Stir until well combined.
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Transfer the broccoli mixture onto the parchment paper and press it into a circular crust shape, about 1/4 inch thick.
  • Bake the crust for about 15-20 minutes, or until it’s golden and crispy.
  • Once baked, spread the pizza sauce evenly over the top, sprinkle your choice of cheese and any additional toppings.
  • Return the topped pizza to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a couple of minutes. Slice and enjoy!

Notes

  • Allow the pizza to cool completely on a wire rack to prevent sogginess.
  • Store leftover slices in an airtight container in the fridge for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for the best texture.
