  • Cooling rack
  • Sharp Knife or Cookie Scoop

For the Cookie Dough:

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup semi-sweet chocolate chips

For the Brownie Center:

  • homemade brownies cooled completely and cut into 1 to 1.5 inch squares

Instructions

Prepare the Brownies

  • Bake your favorite homemade brownies. Once fully baked, cool completely and cut into small squares about 1 to 1.5 inches in size.

Make the Cookie Dough

  • In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs one at a time, then add vanilla extract and mix well.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing just until combined.
  • Fold in semi-sweet chocolate chips evenly throughout the dough.

Assemble and Bake

  • Preheat oven to 350°F (175°C). Scoop a tablespoon of cookie dough and flatten it slightly.
  • Place a brownie square in the center, wrap the dough around it, sealing completely, and roll into a ball.
  • Place cookies on baking sheet about 2 inches apart.
  • Bake for 12 to 15 minutes until edges are golden and centers look soft.
  • Remove from oven and cool on pan for 5 minutes, then transfer to a cooling rack to cool completely.

Serve

  • Serve warm for gooey centers or at room temperature with milk or your favorite hot beverage.

Notes

  • Ensure brownies are completely cooled before stuffing to prevent soggy cookie dough.
  • Chill dough if too soft to help cookies hold shape and prevent spreading.
  • Try seasonal variations like adding cinnamon in winter or nuts in summer for unique flavors.
  • Store cookies in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
  • Use store-bought brownies only if firm and fully cooled to maintain texture.
