Equipment

  • Heavy-bottomed saucepan
  • Wooden Spoon
  • Candy thermometer
  • Baking Sheet
  • Parchment Paper

Ingredients

  • 2 cups butter (4 sticks)
  • 2 cups granulated sugar
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 3/4 cup slivered almonds
  • 3/4 cup butterscotch chips
  • 3/4 cup milk chocolate chips
  • 1 1/2 tsp shortening (divided)

Instructions

  • Line a baking sheet with parchment paper, making sure it’s flat and smooth.
  • In a heavy-bottomed saucepan over medium heat, melt the butter.
  • Add the sugar and salt once the butter is melted. Stir continuously until the sugar dissolves.
  • Bring the mixture to a boil over medium-high heat, aiming for 285°F.
  • Stir in the vanilla extract as the mixture nears the desired temperature.
  • Quickly remove from heat and stir in the slivered almonds.
  • Pour the hot mixture onto the prepared baking sheet and spread it evenly.
  • Sprinkle the butterscotch and milk chocolate chips over the top and allow to melt.
  • Melt the shortening and drizzle it over the chocolate layer for a sheen.
  • Allow to cool completely, then break into pieces and enjoy!

Notes

  • Be vigilant while cooking; toffee can go from perfect to burnt very quickly!
  • Use a candy thermometer for best results, or test by dropping a small amount into cold water.
  • Let the toffee cool completely before cutting to ensure clean breaks.
