Ingredients
  

For the Sushi:

  • 6 cups cooked sushi rice (1200g)
  • 1 piece English cucumber (150g)
  • 1 piece avocado (200g)
  • 1 package imitation crab sticks (10-12 sticks)
  • 1 package nori (about 6 sheets)
  • 1 cup roasted white sesame seeds (150g)
  • to taste wasabi
  • to taste pickled sushi ginger
  • to taste low-sodium soy sauce

Instructions
 

Making California Roll Sushi:

  • Step 1: Prepare the Sushi Rice. Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to your rice cooker’s instructions or in a pot with 2 1/2 cups of water. Let it sit for 10 minutes, then transfer it to a mixing bowl.
  • Step 2: Season the Rice. Mix 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt in a bowl. Heat slightly until the sugar dissolves, then pour over the rice and fold gently.
  • Step 3: Prepare the Fillings. Slice the cucumber into thin strips and cut the avocado in half, removing the pit. Scoop out the flesh and slice into thin strips.
  • Step 4: Assemble the Sushi. Lay a sheet of nori, shiny side down, on your sushi mat. Wet your hands and spread a handful of sushi rice over the nori, leaving about an inch at the top edge.
  • Step 5: Add the Fillings. Lay down strips of cucumber, avocado, and pieces of imitation crab in the center of the rice.
  • Step 6: Roll It Up. Start rolling the nori away from you, applying gentle pressure to form a tight roll. Use water to seal the seam of the nori.
  • Step 7: Cut the Roll. Slice the roll into six or eight equal pieces with a wet knife.
  • Step 8: Garnish and Serve. Sprinkle sesame seeds over the top and serve with wasabi, pickled ginger, and soy sauce.
