- 1 tablespoon canola oil or oil of choice
- 1 onion diced
- 2 bell peppers diced (any color, I used red)
- 5 garlic cloves minced
- 1 pound ground turkey or ground beef if preferred
- 1 heaping cup fresh salsa
- 4 cups cauliflower rice (from one head of cauliflower, or use pre-made)
- 3 tablespoons taco seasoning or use your favorite
- Salt to taste
Heat the canola oil in a large skillet over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes until soft and fragrant.
Stir in the minced garlic and ground turkey. Cook until the turkey is browned and cooked through, about 7-10 minutes.
Sprinkle in the taco seasoning and other spices. Stir well to coat the turkey and vegetables.
Mix in the fresh salsa and cauliflower rice. Cook for an additional 5-7 minutes.
Taste and adjust the seasoning if necessary. Add more red pepper flakes or hot sauce if you prefer it spicier.
Remove from heat and serve warm, topped with garnishes like chopped cilantro, avocado, or cheese.
