In a large mixing bowl, combine the ricotta cheese, plain yogurt, softened margarine, and one egg. Mix well until the ingredients are fully incorporated.
In a small bowl, dissolve the active dry yeast in a few tablespoons of warm water. Allow it to sit for about 5 minutes, or until it becomes frothy.
In another bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the ricotta mixture, followed by the activated yeast. Stir until a soft dough forms.
On a lightly floured surface, knead the dough for about 5-7 minutes, or until it becomes smooth and elastic.
Gently fold in the shredded gruyere cheese into the dough, ensuring it’s evenly distributed.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out the dough to about ½ inch thickness and cut it into strips, about 1 inch wide and 5 inches long.
Place the strips on the lined baking sheet, leaving space between them. Beat the remaining egg and brush it over the tops of the sticks.
Bake in the preheated oven for about 20-25 minutes, or until the Cheese Sticks are golden brown and crispy.
Once baked, remove from the oven and let them cool for a few minutes before serving.
