Cuisine American
- 1 tablespoon olive oil
- 1 pound chicken thighs cut into bite-sized pieces
- 1/2 unit onion diced
- 2 cloves garlic minced
- 1 cup white rice
- 2 cups broccoli finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pinch red pepper flakes
- 2 cups chicken stock
- 1/2 cup sour cream
- 1 1/2 cups cheese shredded
In a large skillet, heat the olive oil over medium-high heat. Add the bite-sized chicken thighs and cook until they are golden brown and cooked through, about 5-7 minutes. Make sure to stir occasionally to ensure even cooking.
Once the chicken is cooked, add the diced onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until the onion becomes translucent and fragrant.
Stir in the white rice, finely chopped broccoli, salt, black pepper, and red pepper flakes. Mix everything together until well combined.
Carefully pour the chicken stock into the skillet, ensuring all the rice is submerged. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes or until the rice is fully cooked and has absorbed most of the liquid.
Once the rice is cooked, remove the skillet from the heat. Stir in the sour cream and shredded cheese until everything is melted and creamy. Adjust the seasoning if necessary.
Spoon the cheesy chicken and broccoli mixture onto plates and serve hot. Garnish with extra cheese or fresh herbs if desired. Enjoy your wholesome meal!
