Serving dish
- 8 ounces Neufchâtel cheese softened
- 3 tablespoons unsalted butter softened
- 1 teaspoon vanilla extract
- 1/4 cup cherry juice from a jar of cherries
- 1 1/4 cups powdered sugar
- 1/4 cup Morello cherries chopped
- 1/4 cup mini chocolate chips plus more for garnishing
In a mixing bowl, combine the softened Neufchâtel cheese and unsalted butter. Use a hand mixer or whisk to beat them together until the mixture is creamy and smooth.
Next, mix in the vanilla extract and cherry juice. Beat the mixture until well combined and fluffy.
Gradually add the powdered sugar, mixing continuously until it is fully incorporated and the dip is light and airy.
Gently fold in the chopped Morello cherries and mini chocolate chips using a spatula. Be careful not to overmix; you want to maintain the chunks of cherries and chocolate.
Transfer the dip to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld. When ready to serve, top with additional mini chocolate chips for a cute finishing touch.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- This dip can be made a day ahead of time for even better flavor.
- For a lighter version, substitute Greek yogurt for Neufchâtel cheese.
