Ingredients
  

  • 8 ounces Neufchâtel cheese softened
  • 3 tablespoons unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1/4 cup cherry juice from a jar of cherries
  • 1 1/4 cups powdered sugar
  • 1/4 cup Morello cherries chopped
  • 1/4 cup mini chocolate chips plus more for garnishing

Instructions
 

  • In a mixing bowl, combine the softened Neufchâtel cheese and unsalted butter. Use a hand mixer or whisk to beat them together until the mixture is creamy and smooth.
  • Next, mix in the vanilla extract and cherry juice. Beat the mixture until well combined and fluffy.
  • Gradually add the powdered sugar, mixing continuously until it is fully incorporated and the dip is light and airy.
  • Gently fold in the chopped Morello cherries and mini chocolate chips using a spatula. Be careful not to overmix; you want to maintain the chunks of cherries and chocolate.
  • Transfer the dip to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld. When ready to serve, top with additional mini chocolate chips for a cute finishing touch.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • This dip can be made a day ahead of time for even better flavor.
  • For a lighter version, substitute Greek yogurt for Neufchâtel cheese.
