Ingredients
  

  • 1 cup unsalted butter 2 sticks
  • 2 bags mini marshmallows divided (about 10 cups)
  • 3 cups Golden Grahams
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt heaping
  • 5 cups Rice Krispies or crispy rice cereal

Instructions
 

  • Grease your 9x13-inch baking pan with butter or line it with parchment paper for easy removal later.
  • In a large saucepan over low heat, melt the unsalted butter. Once melted, add in one bag of mini marshmallows. Stir continuously until melted and smooth.
  • Remove from heat and stir in the vanilla extract and the heaping teaspoon of salt.
  • In a large mixing bowl, combine Rice Krispies and Golden Grahams. Pour the melted marshmallow mixture over the cereals and gently fold until well coated.
  • Add the second bag of mini marshmallows for delightful pockets of gooeyness.
  • Transfer the mixture into your prepared baking pan. Press down firmly and evenly with a spatula or damp hands.
  • Let the treats cool at room temperature for at least 30 minutes before cutting into squares.

Notes

  • Use sugar-free marshmallows for a low-carb version.
  • Make sure to grease the pan to avoid sticking.
  • Press gently to keep treats light and fluffy.
