Ingredients
  

  • 2 slices whole grain bread choose a sturdy, fresh loaf for best results
  • 1 piece cooked chicken breast sliced, rotisserie chicken works perfectly here
  • 1 ripe avocado ripe but firm, so it mashes smoothly without being watery
  • 1/4 cup shredded cheese cheddar or mozzarella both melt beautifully
  • 1 tablespoon mayonnaise use your favorite brand or homemade
  • 1 teaspoon lemon juice fresh squeezed is best for bright flavor
  • salt and freshly ground black pepper to taste
  • optional turkey bacon cooked and crumbled, adds a smoky crunch
  • lettuce leaves crisp romaine or butter lettuce works well
  • sliced tomato ripe and juicy for freshness

Instructions
 

Prepare the Avocado Spread

  • Start by cutting your ripe avocado in half, removing the pit, and scooping the flesh into a bowl. Add the tablespoon of mayonnaise and teaspoon of fresh lemon juice. Mash everything together using a fork until you achieve a creamy, slightly chunky texture. Season with salt and pepper to taste.

Slice the Chicken and Vegetables

  • Slice your cooked chicken breast into thin, even pieces. Wash and pat dry your lettuce leaves and slice the tomato into thin rounds.

Assemble the Sandwich

  • Lay out your two slices of whole grain bread. Spread the avocado mixture generously on one side of each slice. On one slice, layer the sliced chicken breast evenly over the avocado spread. Sprinkle the shredded cheese over the chicken, then add the cooked and crumbled turkey bacon if using. Top with lettuce and tomato slices. Close the sandwich with the second slice of bread, avocado side down.

Toast to Perfection

  • Heat a skillet over medium heat. Place the sandwich in the pan and press down gently with a spatula. Cook for about 3-4 minutes until the bread is golden brown and crispy. Carefully flip the sandwich and cook the other side for another 3-4 minutes, allowing the cheese to melt thoroughly. Cover the pan with a lid if available to melt the cheese faster.

Serve and Enjoy

  • Remove the sandwich from the skillet and let it rest for a minute before slicing in half. Serve with your favorite side or a simple salad for a complete meal.
