Chicken Pesto Grilled Cheese

Ingredients
  

  • 2 slices hearty whole-grain bread
  • 1 tablespoon butter at room temperature
  • 1 to 2 teaspoons prepared or homemade pesto
  • ½ cup shredded Gruyere cheese
  • ½ cup shredded Monterey Jack cheese
  • 3 slices cooked chicken (rotisserie chicken is a terrific shortcut)
  • 2 slices roasted red bell pepper (optional)
  • to taste Salt and freshly ground pepper

Instructions
 

  • Start by gathering all your ingredients. Shred the Gruyere and Monterey Jack cheese if not pre-shredded. Slice the cooked chicken and roasted red bell pepper if using.
  • Spread 1 tablespoon of room-temperature butter evenly on one side of each slice of bread. This will ensure a perfectly golden crust.
  • On the unbuttered side of one slice of bread, spread 1 to 2 teaspoons of pesto. Layer on the shredded Gruyere and Monterey Jack cheese, followed by the slices of chicken and roasted red bell pepper. Season with a pinch of salt and freshly ground pepper. Top with the second slice of bread, buttered side facing out.
  • Place your skillet or griddle over medium heat. Allow it to warm up for a couple of minutes.
  • Carefully place the assembled sandwich in the skillet. Grill for about 3 to 4 minutes, or until the bread is golden brown and the cheese begins to melt.
  • Using your spatula, gently flip the sandwich over. Grill the other side for another 3 to 4 minutes. Keep an eye on it to ensure it doesn't burn.
  • Once both sides are beautifully golden and the cheese is melted, remove the sandwich from the skillet. Allow it to cool for a minute, then slice in half and serve with your favorite side or salad.

Notes

  • Use room temperature ingredients for easier spreading and melting.
  • Cook on medium heat to melt cheese without burning the bread.
  • Press down gently with the spatula for even cooking and flavor melding.
