- 2 slices hearty whole-grain bread
- 1 tablespoon butter at room temperature
- 1 to 2 teaspoons prepared or homemade pesto
- ½ cup shredded Gruyere cheese
- ½ cup shredded Monterey Jack cheese
- 3 slices cooked chicken (rotisserie chicken is a terrific shortcut)
- 2 slices roasted red bell pepper (optional)

Start by gathering all your ingredients. Shred the Gruyere and Monterey Jack cheese if not pre-shredded. Slice the cooked chicken and roasted red bell pepper if using.
Spread 1 tablespoon of room-temperature butter evenly on one side of each slice of bread. This will ensure a perfectly golden crust.
On the unbuttered side of one slice of bread, spread 1 to 2 teaspoons of pesto. Layer on the shredded Gruyere and Monterey Jack cheese, followed by the slices of chicken and roasted red bell pepper. Season with a pinch of salt and freshly ground pepper. Top with the second slice of bread, buttered side facing out.
Place your skillet or griddle over medium heat. Allow it to warm up for a couple of minutes.
Carefully place the assembled sandwich in the skillet. Grill for about 3 to 4 minutes, or until the bread is golden brown and the cheese begins to melt.
Using your spatula, gently flip the sandwich over. Grill the other side for another 3 to 4 minutes. Keep an eye on it to ensure it doesn't burn.
Once both sides are beautifully golden and the cheese is melted, remove the sandwich from the skillet. Allow it to cool for a minute, then slice in half and serve with your favorite side or salad.
