Serving platter
- 4 ounces cooked, shredded boneless skinless chicken breasts
- 1/4 cup salsa verde
- 1 tablespoon light sour cream
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 2 tablespoons sliced green onions
- 1/4 cup reduced-fat Mexican blend cheese
- 8 units wonton wrappers (found in the refrigerated produce section near Asian products)
- 2 tablespoons diced avocados (optional; adds 50 calories)
- Fresh cilantro (for topping)
Step 1: Preheat the Oven. Begin by preheating your oven to 375°F (190°C).
Step 2: Prepare the Chicken Filling. In a mixing bowl, combine the shredded chicken, salsa verde, light sour cream, chili powder, garlic powder, cumin, and sliced green onions. Mix until well incorporated.
Step 3: Assemble the Wonton Tacos. Take a wonton wrapper and place a generous tablespoon of the chicken mixture in the center. Fold the corners of the wrapper toward the center, pinching to create a taco shape.
Step 4: Bake the Tacos. Lightly spray or brush your baking sheet with cooking spray. Place the assembled tacos on the sheet and bake for about 10-12 minutes or until golden brown and crispy.
Step 5: Add the Toppings. Once out of the oven, sprinkle with reduced-fat Mexican blend cheese while hot. Top with diced avocados and fresh cilantro if desired.
- Keep wonton wrappers covered with a damp cloth while working to prevent cracking.
- Don’t overstuff the wonton wrappers; a generous tablespoon of filling is ideal.
- Monitor baking time closely; every oven is different.
