- 2 tablespoons olive oil for sautéing
- 1 onion, diced brings sweetness and depth

- 1 cup diced tomatoes fresh or canned
- 1 cup cooked chickpeas the protein-packed star

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in 1 teaspoon of ground cumin and 1 teaspoon of chili powder. Cook for another minute until the spices are fragrant.
Add 1 cup of diced tomatoes and 1 cup of cooked chickpeas. Mix well and let simmer for about 5 minutes until heated through.
Remove the skillet from heat and stir in the juice of 1 lime and 1/2 teaspoon of sea salt. Taste and adjust seasoning if necessary.
In another skillet, lightly toast the 8 small corn tortillas for a few seconds on each side until warm and pliable.
Spoon a generous amount of the chickpea and tomato filling onto each tortilla. Roll tightly and secure with a toothpick if needed.
In the same skillet, add a bit more olive oil and place the flautas seam-side down. Cook until golden and crispy on all sides, about 3-4 minutes per side.
Remove the flautas from the skillet and let drain on paper towels. Serve warm with 1/2 cup of Greek yogurt for dipping and a sprinkle of fresh chopped cilantro on top.
