- 200 g butter softened
- 150 g sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 pinch salt
- 400 g all-purpose flour
- 100 g dark chocolate 70% cocoa, chopped
- 200 g dark chocolate chopped
- 50 g butter for melting
- candied fruit chopped (your choice of flavors)
Preheat your oven to 180°C (350°F).
In a mixing bowl, cream together 200g of softened butter and 150g of sugar until light and fluffy.
Add 1 egg and 1 teaspoon of vanilla extract. Whisk until smooth.
In a separate bowl, whisk together 400g of flour and a pinch of salt. Gradually add to the wet ingredients, stirring until just combined.
Fold in 100g of chopped dark chocolate and your choice of chopped candied fruit.
Line a baking sheet with parchment paper. Portion the dough onto the sheet, leaving space between cookies.
Bake for 10-12 minutes or until edges are golden and centers are slightly underbaked.
Melt the remaining 50g of dark chocolate with 50g of butter in a microwave-safe bowl until smooth.
Drizzle the melted chocolate over the cookies and allow them to cool completely on the baking sheet.
