- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old-fashioned oats divided
- 2/3 cup semi-sweet chocolate chips divided
- 2/3 cup creamy peanut butter
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a mixing bowl, cream together the softened butter and light brown sugar until light and fluffy.
Step 3: Add the egg, egg yolk, and vanilla extract, mixing until fully incorporated.
Step 4: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients.
Step 5: Fold in 3/4 cup oats and 1/3 cup chocolate chips, then mix in the peanut butter.
