Ingredients
  

  • 10 tablespoons butter softened
  • 1 cup light brown sugar firmly packed
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats divided
  • 2/3 cup semi-sweet chocolate chips divided
  • 2/3 cup creamy peanut butter

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a mixing bowl, cream together the softened butter and light brown sugar until light and fluffy.
  • Step 3: Add the egg, egg yolk, and vanilla extract, mixing until fully incorporated.
  • Step 4: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients.
  • Step 5: Fold in 3/4 cup oats and 1/3 cup chocolate chips, then mix in the peanut butter.
  • Step 6: Grease your oven-safe skillet lightly with butter or cooking spray.
  • Step 7: Spoon the cookie dough into the skillet, spreading it evenly. Sprinkle remaining oats and chocolate chips on top. Bake for 25-30 minutes.
  • Step 8: Allow to cool for a few minutes before serving warm, ideally with a scoop of vanilla ice cream.

Notes

  • Store leftover cookie covered at room temperature for up to 3 days.
  • Freeze slices wrapped in plastic wrap for up to 3 months.
  • Reheat slices in the microwave for 15-20 seconds after thawing.
