Ingredients
  

Cupcake Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup chocolate chips

Peanut Butter Frosting & Garnish

  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 tablespoon milk for frosting
  • 1/4 cup chopped peanuts for garnish

Preparation

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

Mixing the Batter

  • In a large bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar. Whisk well to combine.
  • In a separate bowl, whisk together the vegetable oil, eggs, vanilla extract, and milk until smooth and well incorporated.
  • Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold until just combined. Fold in the chocolate chips.

Baking

  • Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18-22 minutes or until a toothpick inserted comes out clean. Transfer cupcakes to a cooling rack.

Frosting and Finishing

  • While cupcakes cool, make frosting by combining creamy peanut butter, powdered sugar, and 1 tablespoon milk. Beat until fluffy and smooth. Add more milk if needed.
  • Once cupcakes are completely cool, pipe or spread the peanut butter frosting on top. Sprinkle with chopped peanuts.
