Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Electric mixer or hand whisk
  • Loaf pan (9x5 inch)
  • Cooling rack
  • Spatula

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 2 cups peeled and diced apples
  • 0.5 cup chopped walnuts optional

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Grease your loaf pan generously with butter or non-stick spray and set it aside.

Step 2: Mix Dry Ingredients

  • In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, cinnamon, and salt.

Step 3: Cream Butter and Eggs

  • In a large bowl, use an electric mixer or whisk to beat the softened butter until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4: Combine Wet and Dry

  • Alternate adding the dry ingredient mixture and the buttermilk to the butter and egg mixture, starting and ending with the dry ingredients. Mix until just combined.

Step 5: Fold in Apples and Walnuts

  • Gently fold in the diced apples and chopped walnuts if using.

Step 6: Bake the Bread

  • Pour the batter into the prepared loaf pan and smooth out the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil during last 15 minutes if top browns too quickly.

Step 7: Cool and Serve

  • Let the bread cool in the pan for about 15 minutes before transferring it to a cooling rack. Slice and enjoy warm or at room temperature.

Notes

  • Lightly toss diced apples in flour before folding in to prevent them from sinking.
  • Swap apples for pears or add dried cranberries for a seasonal twist.
  • Store wrapped at room temperature for 3 days or freeze up to 3 months.
