Equipment

  • Popover pan
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Oven mitts

Ingredients

For the Batter:

  • 1 tablespoon melted unsalted butter for greasing the pan
  • 1 1/4 cups whole milk brings richness and moisture
  • 2 large eggs provides structure and helps with leavening
  • 1 cup all-purpose flour the base of our batter
  • 1/4 teaspoon fine sea salt enhances flavor
  • 2 tablespoons unsalted butter melted, adds flavor and moisture

Instructions

Instructions:

  • Step 1: Preheat the Oven - Start by preheating your oven to 425°F (220°C). A hot oven is crucial for achieving that perfect rise.
  • Step 2: Prepare the Pan - Using the melted unsalted butter, generously grease each cup of your popover pan. Make sure to coat the sides well to prevent sticking.
  • Step 3: Whisk the Batter - In a mixing bowl, combine the whole milk and eggs. Whisk until well blended. Then, add the all-purpose flour and fine sea salt, whisking until the batter is smooth. It’s okay if there are a few small lumps; do not overmix.
  • Step 4: Add Melted Butter - Gently fold in the melted unsalted butter to the batter. This step adds flavor and keeps the popovers moist.
  • Step 5: Fill the Pan - Pour the batter into the prepared popover pan, filling each cup about halfway. This allows enough room for the popovers to rise.
  • Step 6: Bake - Place the pan in the preheated oven and bake for 20 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for an additional 15-20 minutes, or until the popovers are golden brown and puffed.
  • Step 7: Serve Immediately - Remove the popovers from the oven and gently take them out of the pan. They are best served warm, fresh out of the oven. Enjoy with butter, jam, or your favorite spread!

Notes

  • Use room temperature milk and eggs for a smoother batter.
  • All-purpose flour works best, but gluten-free options can be tried.
  • Ensure your oven is fully preheated for optimal rise.
