For the Alfredo Sauce:
- 8 tablespoons butter salted or unsalted, your choice
- 3 tablespoons all-purpose flour
- 2 tablespoons minced garlic
- 2 cups heavy cream or heavy whipping cream
- 1 cup milk whole milk is preferred
- 1 1/2 cups parmesan cheese freshly grated for the best flavor
- 1/2 cup romano cheese freshly grated
- 16 ounces fettuccine noodles feel free to use other pasta shapes
- Freshly chopped parsley optional, for garnish
Directions
Start by bringing a large pot of salted water to a boil. Add the fettuccine noodles and cook according to the package instructions until al dente. Once cooked, drain the pasta and set aside, reserving a small cup of pasta water for later.
In a large skillet or saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the all-purpose flour and whisk continuously for about 2 minutes to create a roux.
Slowly pour in the heavy cream and milk, whisking constantly to avoid any lumps. Keep stirring until the mixture starts to bubble and thicken, which should take about 5-7 minutes.
Once the sauce has thickened, reduce the heat to low and gradually add the freshly grated Parmesan and Romano cheeses. Stir until the cheeses are completely melted and the sauce is creamy. If the sauce is too thick, you can add a little of the reserved pasta water to reach your desired consistency.
Toss the cooked fettuccine into the Alfredo sauce, ensuring all the noodles are coated evenly. Allow it to cook together for another minute to meld the flavors.
