  • 2 medium eggs
  • 1 medium red onion, finely chopped
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon garlic powder
  • 3 tablespoons lemon juice
  • cup chopped cilantro
  • teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon vegetable oil For frying (options include corn, sunflower, or canola)

Instructions
 

  • Step 1: Prepare the Corn - Thaw the frozen corn kernels and pat them dry with a paper towel to remove excess moisture.
  • Step 2: Mix the Dry Ingredients - In a mixing bowl, combine the flour, baking powder, garlic powder, salt, and black pepper. Stir until well blended.
  • Step 3: Combine the Wet Ingredients - In a separate bowl, beat the eggs and add the lemon juice. Mix well, then fold in the red onion and cilantro.
  • Step 4: Combine Wet and Dry Ingredients - Pour the wet mixture into the dry mixture and stir until just combined. Fold in the corn kernels.
  • Step 5: Heat the Oil - In a skillet, heat the vegetable oil over medium heat until hot.
  • Step 6: Fry the Fritters - Drop spoonfuls of batter into the hot oil and flatten slightly. Fry for 3-4 minutes on each side until golden brown.
  • Step 7: Drain and Serve - Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve hot, garnished with cilantro and lemon wedges.

Notes

For added flavor, mix in jalapeños or bell peppers. Avoid overcrowding the pan while frying.
