Ingredients
  

  • 1 tablespoon butter for spreading and flavor
  • 2 slices whole-grain or gluten-free bread the base of your sandwich
  • 1/4 avocado mashed or sliced
  • 1/2 Roma tomato sliced
  • 1/4 cup cucumber sliced
  • 1/3 cup full-fat cottage cheese the star of the dish
  • Salt and pepper to taste

Preparation Steps

  • Begin by gathering all your ingredients. Slice the Roma tomato and cucumber, and mash the avocado in a small bowl if you prefer it that way.
  • In a skillet over medium heat, melt the tablespoon of butter. Once melted, add the slices of bread and toast them until they are golden brown on both sides, about 3-4 minutes per side.
  • Once the bread is toasted, remove it from the skillet and spread the mashed avocado evenly over one side of each slice.
  • On top of the avocado, add the cottage cheese, spreading it out evenly to cover the bread.
  • Next, place the sliced tomatoes and cucumbers on one of the slices. Sprinkle a pinch of salt and pepper over the vegetables for extra flavor.
  • Carefully place the other slice of bread on top, avocado side down, to create your sandwich.
  • Cut the sandwich in half if desired, plate it up, and dig in! Enjoy the burst of flavors and textures in every bite.
