- 1/2 cup balsamic vinegar

- 1 tablespoon honey
- 3 cloves garlic minced
- 1 teaspoon dried thyme
- to taste salt
- to taste black pepper
- 1/2 cup chicken broth
- fresh parsley chopped (for garnish)
Stepwise Method: Cranberry Balsamic Chicken Skillet
Start by patting the chicken breasts dry with paper towels. This helps them brown nicely. Season both sides generously with salt, black pepper, and dried thyme.
Heat 2 tablespoons of olive oil in your skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5 minutes on each side, until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate.
Reduce the heat to medium. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Pour in the balsamic vinegar, chicken broth, and honey. Stir well to combine and let the mixture simmer for 3-4 minutes, allowing it to reduce slightly.
Stir in the fresh cranberries. They will start to pop and soften, releasing their tart flavor into the sauce. Let it cook for another 3 minutes until the cranberries have softened but still hold some shape.
Place the seared chicken breasts back into the skillet. Spoon some of the sauce and cranberries over the top. Cover the skillet and let everything simmer together for 5 minutes, allowing the chicken to soak up the delicious flavors.
Sprinkle chopped fresh parsley over the chicken and sauce for a bright, fresh finish. Serve immediately with your favorite sides.
- For a thicker sauce, simmer the sauce longer before adding the chicken back to the skillet.
- Frozen cranberries can be used directly in the sauce; just cook a couple of minutes longer.
- Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
