Equipment

  • Baking Sheet
  • Muffin tin or mini tart pan
  • Pastry Brush
  • Sharp knife or pizza cutter
  • Mixing Bowl
  • Cooling rack

Ingredients

  • 1 sheet puff pastry thawed
  • 4 oz Brie cheese cut into small pieces, rind can be left on
  • 1/2 cup cranberry sauce homemade or store-bought, whole berry preferred
  • 1 egg egg beaten, for brushing puff pastry
  • fresh rosemary or thyme for garnish, optional

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease your muffin tin or mini tart pans. Unwrap your thawed puff pastry sheet on a lightly floured surface.
  • Cut the puff pastry sheet into 12 equal squares using a sharp knife or pizza cutter. Gently press each square into the muffin tin wells, making sure the edges come up the sides.
  • Place a small piece of Brie cheese into the center of each puff pastry square. Leave the rind on if desired.
  • Top each Brie piece with about a teaspoon of cranberry sauce. Spread gently to avoid spilling over edges.
  • Beat the egg in a small bowl and brush the exposed edges of the puff pastry with the egg wash using a pastry brush.
  • Bake in the preheated oven for 15-20 minutes, or until puff pastry is golden and Brie is melted and bubbly.
  • Remove from oven and let cool for a few minutes. Garnish each bite with a small sprig of fresh rosemary or thyme. Serve warm.

Notes

  • Prepare the bites a few hours ahead and refrigerate unbaked for convenience.
  • Substitute cranberry sauce with fig jam or apricot preserves for a sweet twist.
  • Try different cheeses like Camembert or mild goat cheese for flavor variation.
  • For extra savory flavor, add prosciutto or toasted nuts inside each bite.
  • Reheat leftovers in a low oven to crisp the pastry without over-melting the cheese.
