Cranberry Brie Bites with Puff Pastry
These Cranberry Brie Bites are SO EASY! Flaky puff pastry cups filled with creamy Brie and tangy cranberry sauce make a perfect elegant appetizer.

- 1 sheet puff pastry thawed
- 4 oz Brie cheese cut into small pieces, rind can be left on
- 1/2 cup cranberry sauce homemade or store-bought, whole berry preferred
- 1 egg egg beaten, for brushing puff pastry
- fresh rosemary or thyme for garnish, optional
Preheat your oven to 375°F (190°C). Lightly grease your muffin tin or mini tart pans. Unwrap your thawed puff pastry sheet on a lightly floured surface.
Cut the puff pastry sheet into 12 equal squares using a sharp knife or pizza cutter. Gently press each square into the muffin tin wells, making sure the edges come up the sides.
Place a small piece of Brie cheese into the center of each puff pastry square. Leave the rind on if desired.
Top each Brie piece with about a teaspoon of cranberry sauce. Spread gently to avoid spilling over edges.
Beat the egg in a small bowl and brush the exposed edges of the puff pastry with the egg wash using a pastry brush.
Bake in the preheated oven for 15-20 minutes, or until puff pastry is golden and Brie is melted and bubbly.
Remove from oven and let cool for a few minutes. Garnish each bite with a small sprig of fresh rosemary or thyme. Serve warm.
