Ingredients

  • 1 cup heavy cream
  • 1/2 cup chicken broth use low sodium if preferred
  • 1/4 cup butter
  • salt and pepper to taste

Step 1: Prep and Boil the Potatoes

  • Peel your potatoes and cut them into uniform 1-inch dice to ensure even cooking. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until fork-tender but not falling apart, about 12-15 minutes. Drain well and set aside.

Step 2: Sauté the Garlic

  • In a medium skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and lightly golden. Be careful not to burn the garlic.

Step 3: Build the Creamy Sauce

  • Add the chicken broth to the garlic and butter and bring to a gentle simmer. Let it reduce slightly for 2-3 minutes. Pour in the heavy cream, stirring continuously. Allow the mixture to simmer until it thickens slightly, about 4-5 minutes.

Step 4: Combine Potatoes with Sauce

  • Add the drained potatoes to the skillet and gently toss to coat them in the creamy garlic sauce. Let cook together for a few minutes to meld flavors. Season generously with salt and pepper to taste.

Step 5: Garnish and Serve

  • Remove from heat and sprinkle chopped fresh parsley over the top for color and freshness. Serve immediately as a delightful side dish.
