For the Chicken Fingers:

  • 2 pieces Chicken breasts trimmed and sliced into strips
  • 1 cup corn flakes crushed
  • 1 cup all-purpose flour
  • 1 piece egg beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1 cup grated parmesan

  • Step 1: Prepare the Oven and Baking Sheet. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Step 2: Prepare the Chicken. Trim the chicken breasts of any excess fat and slice them into strips about 1 inch wide.
  • Step 3: Set Up the Breading Station. In one mixing bowl, add the flour, salt, black pepper, and sweet paprika. In a second bowl, whisk the egg until well beaten. In a third bowl, combine the crushed corn flakes and grated parmesan.
  • Step 4: Coat the Chicken. Dip each chicken strip into the flour mixture, then the egg, and finally roll in the cornflake and parmesan mixture.
  • Step 5: Bake the Chicken Fingers. Place the coated chicken fingers onto the prepared baking sheet. Lightly spray or drizzle with olive oil.
