For the Tacos:

  • 1 pound boneless, skinless chicken thighs juicy and flavorful

  • 2 teaspoons ground cumin for seasoning
  • 1 teaspoon smoked paprika for flavor
  • ½ teaspoon chili powder for mild kick

  • ½ teaspoon onion powder for complementary taste
  • 8 small (4-inch) flour tortillas for holding fillings
  • 8 ounces sharp cheddar cheese freshly grated
  • 1 cup grape tomatoes quartered
  • ½ red onion finely diced
  • ½ cup fresh cilantro chopped
  • 1 lime juiced

  • Step 1: Prepare the Chicken - Pat the chicken thighs dry with paper towels. Season both sides generously with kosher salt and pepper.
  • Step 2: Season the Chicken - In a small bowl, mix together the ground cumin, smoked paprika, chili powder, garlic powder, and onion powder. Rub this spice mixture all over the chicken thighs for maximum flavor.
  • Step 3: Heat the Skillet - In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the seasoned chicken thighs.
  • Step 4: Cook the Chicken - Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let it rest.
  • Step 5: Shred the Chicken - Once cool enough to handle, shred the chicken using two forks or your hands.
  • Step 6: Assemble the Tacos - In the same skillet, reduce heat to low. Place a tortilla in the skillet, add cheddar cheese, then shredded chicken on top, and fold.
  • Step 7: Crisp the Tacos - Cook for 2-3 minutes on each side, until cheese is melted and tortilla is golden and crispy. Repeat with remaining ingredients.
  • Step 8: Top and Serve - Remove crispy tacos from the skillet and top with tomatoes, red onion, cilantro, and lime juice. Serve immediately.

  • For added fiber, use whole wheat or corn tortillas instead of flour.
