Microwave-safe Bowl
- 2 cups creamy peanut butter natural variety for best flavor
- 3 cups rice cereal for crunch
- 2 tablespoons pure maple syrup or honey for sweetness
- 2 cups dark chocolate melted, for coating
- 1 teaspoon vanilla extract for flavor
- 1/4 cup peanuts chopped, optional
Start by lining a baking sheet with parchment paper to prevent sticking.
In a large mixing bowl, combine the creamy peanut butter, pure maple syrup (or honey), and vanilla extract. Mix until smooth.
Gently fold in the rice cereal. If using, add chopped peanuts at this stage.
Scoop out a small amount of the mixture and roll it into a 1-inch ball. Place on the prepared baking sheet.
Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Dip each ball into the melted chocolate, ensuring it's fully coated. Use a fork to lift it out and allow excess chocolate to drip off.
Chill the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is set.
- For gluten-free, use gluten-free rice cereal.
- For vegan, substitute honey with maple syrup and ensure chocolate is dairy-free.
- Store in an airtight container in the refrigerator for up to one week.
