Ingredients
  

  • 2 cups creamy peanut butter natural variety for best flavor
  • 3 cups rice cereal for crunch
  • 2 tablespoons pure maple syrup or honey for sweetness
  • 2 cups dark chocolate melted, for coating
  • 1 teaspoon vanilla extract for flavor
  • 1/4 cup peanuts chopped, optional

Instructions
 

  • Start by lining a baking sheet with parchment paper to prevent sticking.
  • In a large mixing bowl, combine the creamy peanut butter, pure maple syrup (or honey), and vanilla extract. Mix until smooth.
  • Gently fold in the rice cereal. If using, add chopped peanuts at this stage.
  • Scoop out a small amount of the mixture and roll it into a 1-inch ball. Place on the prepared baking sheet.
  • Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  • Dip each ball into the melted chocolate, ensuring it's fully coated. Use a fork to lift it out and allow excess chocolate to drip off.
  • Chill the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is set.

Notes

  • For gluten-free, use gluten-free rice cereal.
  • For vegan, substitute honey with maple syrup and ensure chocolate is dairy-free.
  • Store in an airtight container in the refrigerator for up to one week.
