Start by chopping the chicken thighs into bite-sized pieces. Next, seed and chop the bell peppers, peel and chop the red onion, and quarter the button mushrooms. Finally, mince the garlic.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt, pepper, and smoked paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter. Add the chopped red onion, bell peppers, and mushrooms. Sauté for about 5 minutes until the vegetables are tender. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat everything through, about 2-3 minutes. Taste and adjust seasoning if necessary.
