Ingredients
  

  • 1.5 pounds boneless skinless chicken thighs Cut into bite-size pieces
  • 2 pieces bell peppers Any color, seeded and roughly chopped
  • 1 piece red onion Peeled and roughly chopped
  • 8 ounces button mushrooms Quartered
  • 4 cloves garlic Minced
  • 4 tablespoons butter For sautéing
  • 1 tablespoon fresh thyme leaves OR 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper Enhancing all the flavors

Instructions
 

  • Start by chopping the chicken thighs into bite-sized pieces. Next, seed and chop the bell peppers, peel and chop the red onion, and quarter the button mushrooms. Finally, mince the garlic.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt, pepper, and smoked paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of butter. Add the chopped red onion, bell peppers, and mushrooms. Sauté for about 5 minutes until the vegetables are tender. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
  • Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat everything through, about 2-3 minutes. Taste and adjust seasoning if necessary.
  • Transfer your Croatian Chicken and Vegetables to a serving platter and enjoy warm. This dish pairs wonderfully with rice, crusty bread, or a simple green salad.
