- 2 cups Oats (old-fashioned or quick oats work well)
- 1 cup Desiccated coconut
- 180 grams Dates (finely chopped)
- 230 grams Butter (softened)
- 1 tablespoon Golden syrup (or honey for a different flavor)
- 1 cup Brown sugar (packed)
- 1 tablespoon Bicarbonate of soda (baking soda)
Preheat your oven to 180°C (350°F).
Line your baking tray with parchment paper, leaving some overhang on the sides.
In a large mixing bowl, combine the flour, oats, desiccated coconut, and bicarbonate of soda. Stir well.
Cream together the softened butter and brown sugar until light and fluffy (about 2-3 minutes).
Mix in the golden syrup until fully incorporated.
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
Gently fold in the finely chopped dates until evenly distributed.
Pour the mixture into the prepared baking tray and spread it out evenly.
Bake for 25-30 minutes, or until the edges are golden brown.
Let the tray cool for about 10 minutes, then lift out and place on a wire rack to cool completely before cutting into squares.
