Ingredients
  

  • 1 cup Flour
  • 2 cups Oats (old-fashioned or quick oats work well)
  • 1 cup Desiccated coconut
  • 180 grams Dates (finely chopped)
  • 230 grams Butter (softened)
  • 1 tablespoon Golden syrup (or honey for a different flavor)
  • 1 cup Brown sugar (packed)
  • 1 tablespoon Bicarbonate of soda (baking soda)

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Line your baking tray with parchment paper, leaving some overhang on the sides.
  • In a large mixing bowl, combine the flour, oats, desiccated coconut, and bicarbonate of soda. Stir well.
  • Cream together the softened butter and brown sugar until light and fluffy (about 2-3 minutes).
  • Mix in the golden syrup until fully incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the finely chopped dates until evenly distributed.
  • Pour the mixture into the prepared baking tray and spread it out evenly.
  • Bake for 25-30 minutes, or until the edges are golden brown.
  • Let the tray cool for about 10 minutes, then lift out and place on a wire rack to cool completely before cutting into squares.

Notes

  • Store in an airtight container at room temperature for up to a week.
  • Freeze tightly wrapped for up to three months.
  • Customize by adding nuts or dried fruits for variations.
